Family 'always wanted to open a restaurant'; welcome to Berkshire Palate in Williamstown

WILLIAMSTOWN — There is a new eatery in town, and it is not a stretch to say it is a family restaurant.

It is owned and operated by three brothers — Nolan, Aaron and Zach Brassard — and by their father, Paul Brassard.

Berkshire Palate, which is in the Colonial Plaza shopping center at 240 Main St., softly opened in early November. And business has been climbing ever since.

The guys started thinking about getting into the restaurant business when Zach graduated from culinary school at the State University of New York-Cobleskill, the elder Brassard said. After scoping out more than a dozen locations, they landed on Main Street in Williamstown — partly because of all the cultural attractions and the economic activity of late.

And the proximity of local farms and other producers helped in sourcing their ingredients.

"In every way you could call this a local restaurant," Paul said.

Each son plays a big role in the business.

"They're the ones doing the heavy lifting," Paul said.

Zach is the chef, in charge of creating and tweaking the menu and setting the cooking parameters. And he likes to take things in new directions.

"I love being creative," he said. "The items on our menu are not like any other menus. Even our buffalo chicken is not like anyone else's."
